How do you change the difficulty for the creatures in CriticalRole?

@LumberBreezy @CriticalRoleHow do you change the difficulty for the creatures in @CriticalRole? I’m dming 8 players and want to keep things interesting. Increase damage and HP slightly. Give some attacks the ability to hit multiple targets. Some escape abilities.
